Homemade Vegetable Stock

This stock is great for using the bits of vegetables people usually throw away after prepping. Any veg ends/peelings can be used if you have enough, saves you throwing it out. Waste not want not. For my stock on the day I used

  • Cauliflower end and Green leaves
  • 1 Broccoli End
  • 1 Onion and extra ends and skins
  • 2 Whole Garlic Cloves
  • 2 carrots and Peelings
  • 2 Bay leaves
  • Fresh Tyhme

Whole Black Peppercorns Pop all the ingredients in to a pot and cover with water. Bring to the boil and then let it simmer for 1hr – 1.5hrs Strain the mixture in to a large bowl Pour in to individual containers to freeze then use in soups, broths, stews…anything that calls for stock!
