My best friends wedding

So this weekend we had our bestfriends’ wedding so I have been kinda quiet on the cooking and blogging front with all the celebrations 🙂

Heres a little run down of the amazing wedding food…

The canapes were to die – they included mini crackers with chicken liver parfait and mini sole bites in a tempura batter. The meal itself could not have been nicer, there was a great choice and we really REALLY enjoyed it. Scallops for starters and Rib eye steak for Main course and the dessert was a mini taster of a few different desserts – an assiette – and it was delicious! 😀
The next day there was a BBQ for everyone with marinated butterflied chicken fillets (which my fair hands helped in preparing the day before the wedding) Home made steak burgers and an extensive selection of salads and baps. All fabulous!! Lots of dancing and drink means I am still ‘tired’ but hey it was sooo worth it! 😉 😉

Heres the quick and tasty marinade for the chicken

-Soy sauce

-Sesame Oil

-Sweet Chilli Sauce

Mix the marinade ingredients together, Butterfly chicken fillets and marinade for as long as possible. BBQ or Chargrill until cooked – they are just super tasty. Mmmmmmmmmm
