Cauliflower, Squash & Spinach Soup


This is a fabulous soup, easy to make and very healthy. The bread on the side is gluten free and it was a dry packet mix I bought to try, I will put the review and details of the bread in a seperate post 🙂

-Half a spanish onion, diced
-1/4 head of Cauliflower, broke in to florets
-Half a Butternut Squash, cubed
-Handful of Spinach
-Chicken Stock (I use knorr stock pot for handiness)
-Bay leaf (optional)
-Garlic (1/4 teaspoon of powder or half a clove) (optional)
-Black Pepper
-Spray Oil
-Fresh Basil leaves (or parsley if you prefer)

Spray a saucepan with spray oil and once hot add the onions. Cook for a few minutes until translucent
Add the squash and garlic if using, fry for a few minutes
Add the chicken stock
Bring back to the boil and then add the cauliflower florets
Turn the heat down to low-medium and add the bay leaf and some black pepper if using
Once the cauliflower is cooked remove the bay leaf and add the spinach
The spinach will be cooked after a minute or two, remove from the heat and whizz the soup up
Taste for seasoning
I like to add fresh basil to the top of the soup, use other herbs if you prefer.
