No Carb Pizza

Ok so I LOVE pizza but the dough does not love me so I decided to try ways I can make pizza without the dough and this is sooo tasty! The base of the pizza is made with cauliflower, YES cauliflower – its actually my new wonder vegetable (more on that in other posts) 🙂 You can use any toppings you like, below is my preferred choice.

 

Ingredients:

1 egg

Head of cauliflower

100g Low fat mozzarella grated

One clove of Garlic

Oregano

Turkey Salami

1 Tin of tomatoes

Tomato Puree

1 Red pepper

1 Onion

Chilli Flakes (to taste)

 

Preheat Oven to 200c

Using the grater part on your food processor grate the head of cauliflower until it resembles rice. Put this in a microwaveable bowl cover with cling film and cook in the microwave for 8 minutes.

Chop the veg and garlic

Whizz the tinned tomatoes, tomato puree and oregano together in the food processor until it resembles pizza sauce (you can buy the sauce if you prefer)

Once the Cauliflower is done add half the mozarella and the egg and mix together.

Spray a pizza pan with spray oil and put the cauliflower mixture on to it and flatten out and shape in to a pizza base Cook for 10-15 minutes

Take out the base and add the tomato sauce leaving about half an inch around the edge

Add the rest of the cheese, onions, peppers, turkey salami and chilli flakes. Add more oregano if you like

Put back in to the oven for 10/15 minutes until nicely browned
