Cajun Chicken Stirfry with Cauli-Rice

This recipe is super healthy and full of yummy ingredients. You can add whatever vegetables you prefer – broccoli, mange tout and bean sprouts are great in it too I just used what I had in the fridge on the day.

Ingredients:

-Spray oil or Olive oil

-Two Chicken Breasts cut in to strips

-Cauli-rice (see cauliflower page)

-Half a spanish onion, sliced

-Half yellow pepper, cut in strips

-Half red pepper, cut in strips

-1 Large carrot, julienne

-1 Courgette

-100g Spinach

-Soya sauce to taste

-2 Garlic Cloves

-1/2 tsp paprika

-1/4 tin of tomatoes chopped up

-1/2 tsp of Ginger (powder or fresh)

For the Marinade:

-Tablespoon natural yogurt

-Tablespoon lemon juice

-1/4 tsp of paprika

-Tsp of cajun seasoning

Mix marinade ingredients together and add chicken, marinade up to 24 hours if possible. If not try to marinade at least for an hour.

Heat your wok, add your oil and add the chicken. Stirfry for 4-5 minutes until golden. When the chicken is cooked remove to a plate, add onions to the wok and fry until they are translucent. Add carrots, peppers, courgettes, garlic and ginger, stirfry for a few minutes until they are softened.

Add the cauli-rice and mix around, add the chicken back in along with the soy sauce and tomatoes and paprika. Add the spinach and cook for 1 minute or so.

Add whatever herbs you like at the end, I added coriander to this stirfry. Mmmmm

Cauliflower, Squash & Spinach Soup

This is a fabulous soup, easy to make and very healthy. The bread on the side is gluten free and it was a dry packet mix I bought to try, I will put the review and details of the bread in a seperate post 🙂

Ingredients:
-Half a spanish onion, diced
-1/4 head of Cauliflower, broke in to florets
-Half a Butternut Squash, cubed
-Handful of Spinach
-Chicken Stock (I use knorr stock pot for handiness)
-Bay leaf (optional)
-Garlic (1/4 teaspoon of powder or half a clove) (optional)
-Black Pepper
-Spray Oil
-Fresh Basil leaves (or parsley if you prefer)

Spray a saucepan with spray oil and once hot add the onions. Cook for a few minutes until translucent
Add the squash and garlic if using, fry for a few minutes
Add the chicken stock
Bring back to the boil and then add the cauliflower florets
Turn the heat down to low-medium and add the bay leaf and some black pepper if using
Once the cauliflower is cooked remove the bay leaf and add the spinach
The spinach will be cooked after a minute or two, remove from the heat and whizz the soup up
Taste for seasoning
I like to add fresh basil to the top of the soup, use other herbs if you prefer.

No Carb Pizza

Ok so I LOVE pizza but the dough does not love me so I decided to try ways I can make pizza without the dough and this is sooo tasty! The base of the pizza is made with cauliflower, YES cauliflower – its actually my new wonder vegetable (more on that in other posts) 🙂 You can use any toppings you like, below is my preferred choice.

 

Ingredients:

1 egg

Head of cauliflower

100g Low fat mozzarella grated

One clove of Garlic

Oregano

Turkey Salami

1 Tin of tomatoes

Tomato Puree

1 Red pepper

1 Onion

Chilli Flakes (to taste)

 

Preheat Oven to 200c

Using the grater part on your food processor grate the head of cauliflower until it resembles rice. Put this in a microwaveable bowl cover with cling film and cook in the microwave for 8 minutes.

Chop the veg and garlic

Whizz the tinned tomatoes, tomato puree and oregano together in the food processor until it resembles pizza sauce (you can buy the sauce if you prefer)

Once the Cauliflower is done add half the mozarella and the egg and mix together.

Spray a pizza pan with spray oil and put the cauliflower mixture on to it and flatten out and shape in to a pizza base Cook for 10-15 minutes

Take out the base and add the tomato sauce leaving about half an inch around the edge

Add the rest of the cheese, onions, peppers, turkey salami and chilli flakes. Add more oregano if you like

Put back in to the oven for 10/15 minutes until nicely browned

Turkey salami,Brie & relish wrap

These are super quick to make and oh so delicious!!

Ingredients:
1 egg
3 slices of turkey salami (or more if u prefer)
30g of Brie
Tbsp tomato relish

To make the wrap
Whisk up the egg and pour in to a non stick frying pan swirl it around until it covers the entire base of the pan turn over after about a minute to cook the other side. Pour on to a chopping board and its ready to be filled! Its a gluten and carb free alternative to flour wraps and so quick to make!

Spread the relish on to the wrap

I like to dry fry the Salami so its crispy, add to the wrap then top with the Brie. Roll up and put in to the frying pan to heat the Brie so it melts in the wrap – 30 seconds each side should do.

Munch it up 😃

Well here goes, my first ever blog post! Welcome to crackersaboutfood and I think the name speaks for itself. I absolutely love cooking and decided it was about time I shared my recipes and dishes with the online world 🙂

My first recipe will be Turkey salami, brie and relish wraps – its a quick and easy recipe which is low carb, gluten free and SUPER tasty!
